Hi!
I'd appreciate any suggestions and evaluation:

Nationality: Italian
Age: 22
Education: Bachelor in Philosophy, University of Bologna - GPA 4.0 (110 cum laude)
Work Experience : 2 years in music industry in sales and events (top 3 italian music tour agency and promoting events)
GMAT : I'm preparing for it. My target is 700+

I want to apply for best European BS (HEC, LBS...) and American (especially MIT).

What can I do to increase my odds?

I'd focus on the GMAT and taking some quantitative classes. You need to have stats and calc for most programs. With your major and work experience, schools are going to question why you want an MSF. Maybe look at CFA L1 to brush up on finance and show you understand the concepts.

Do very well on the quant part of the GMAT as well. They will be looking to see how you do as an indicator on how you can handle the program.
