I wasn't sure what "Penn" meant, but I'll give my perspective to this school as NOT wharton.
I think you have a decent shot of gaining admission to at least one school on your list. A Mexican-American puts you at an advantage, as well as a D1 baseball player. You can definitely spin your optional essay around and discuss your full-time work experience through college, which contributed (may or may not) to your lower GPA. I think your GMAT score is in line with your target school.
