You are right that your GMAT score will matter tremendously. A score of a 700 would be the minimum you should achieve. That's not to say you can't get in with a sub-700 score but, with a 3.0 GPA, that might be a bridge too far for the three schools you are targeting. You do not want to sell an image of someone who is not technically capable of handling the rigors of the MBA program.
Besides that, on the veneer, your experience looks promising. That you are managing over 30 people, have international experience and offer considerable volunteer work will all be feathers in your cap. The key is to make sure you are sufficiently describing your accomplishments in your application and, in particular your essays. Too often, we see that many candidates either oversell or undersell in their first drafts of their essays.
