You come from an overrepresented demographic that scores disproportionately high on the GMAT and typically has high GPAs. Your 700 will open doors for you at the programs you list (though your verbal score is below the 80% mark that top programs set), but it will be your leadership experience that will get you in.
To the degree that you can demonstrate to admissions committees that you can influence people/organizations, drive results, and take initiative, the more competitive you will be.
Generally, programs value more recent experience, so your college activities would likely not weigh too heavily. Have you engaged in other activities outside of work over the past 3 years?
In summary, I think your GMAT will make you eligible for the programs you list (e.g., GMAT average at IE is 680). That said, your GPA is on the low side and you come from an overrepresented demographic in the applicant pool. As I urge you above, call out the leadership of your leadership experience both in and out of work. Moreover, tie together your past and present with your future goals to paint a cohesive career path. If you can do that, I think you should have a fighting chance.
