That's great you made the switch to a big 4 consulting role, hopefully you've now had a good amount of leadership experience on those large-scale projects. And the app development / partnership with government sounds really cool and should help differentiate your profile. And that will also be good backup for your long-term goal in entrepreneurship, which can be seen as risky by adcoms if no prior exposure.
For your demographic pool, your academic stats are going to be challenging though. I really hope you can get that GMAT up! As of now, I think your school list skews a bit too competitive so just keep that in mind depending on how the GMAT retake goes.
