- 3 years at matriculation at S&P (the ratings agency) (promoted once)
This is a little bit light but meets the threshhold and I'm glad you've been promoted
- 1-year Co-Op at Johnson & Johnson during college (managed another intern as well), does it count as a year of work experience, it was full time.
The clipboard will have 3 years at the top of it however I'm sure that as they go through your resume and your applications etc. if you refer to this experience and show how this has developed you into an exceptional person then of course it will factor in.

involved in volunteering at NY Cares, Treasurer of tennis club in college, involved with recruiting at my college at S&P
Do you have any results to speak of as far as the New York cares piece? Have you done anything for one particular entity that you can point to as proof of your leadership skills? Tennis club is good, make sure to gather any proof of results at S&P with the recruitment piece.
Undergrad school/major: BS in Finance from big state School (think Penn state/Rutgers/UMass)

Do you know why? Rather why this will satisfy you. Make sure to research your career goal so you can speak to this passionately.
Target schools: CBS (would be willing to do ED here if it helps), Wharton, Booth
I stared at this for quite a while until I remembered that ED means early decision in this context.
You have your GMAT sorted, and if you have the ability to get your application together by that time, yes it would most definitely be the wisest choice if Colombia is your top choice. Given the location it might well be.
However, if it is not your top choice then submit your application directly after the ED deadline
Please rate my chances at these schools and anything you think I can do to improve my chances, also wanted to know how rating agency experience is viewed in eyes of admissions.
It's kind of difficult to say because we don't really know much about the stuff we could put it as says like what is the nature of your involvement with extracurriculars your hobbies it's not really like work experience plus grades plus GMAT equals school.
Very important for you to make an emotional connection with the adcom and so given that this is kind of missing anything that would really bring out into focus not sure yet. But statistically you are OK, your grades are a hair low but definitely not a problem and it will not keep you out of any schools.
A good way to think about this -not about evaluation but selection. It's not really about checking boxes on this that or the other but really getting them excited about you and the qualities that you bring and the energy you would infuse up on the campus based on your presence.
Rather than thinking about this in terms of how they would assess rating experience it's more about how you sell your experience in terms of showing your aptitude for problem solving leadership team work communication skills mentorship etc.
They welcome applications from all kinds of people and they want that diversity but the thing is you do need to articulate how you have model the qualities that business schools are seeking whether you are running a ballet company or the head of Goldman Sachs
