Your volunteer work is really strong too, and definitely keep that up til you apply, possibly keeping an eye out for opportunities to expand your roles even further (e.g. recruiting other mentors, getting a board type position, planning a large fundraising event, etc.)
Your work experience sounds strong too (though of course I don't have all the details), and hopefully you have good examples of leadership/team management, client interaction/presentation, taking initiative. We have seen a number of MBA applicants recently who are exiting oil & gas, so make sure you're thinking about (and can articulate) how that experience will help set you up to do well in your future career. I think a career change is doable, though for purposes of your application, I recommend picking either banking or consulting, not both. So you'll want to do some more research there.
