Regarding you stats, you do have an excellent GMAT and a solid GPA from IE, and they will help compensate for your undergrad GPA. However, it is still worth considering taking a supplemental course - for example statistics or accounting (depending on your transcript) - to really show the admissions committee that you have the quantitative ability to succeed in the classroom.
As for your extracurriculars, it is important to show leadership, so hopefully you can illustrate that in your volunteering, or consider participating in another extracurricular activity, where you can demonstrate leadership and impact.
It is hard to gauge your work experience without knowing your accomplishments there. The average years of work experience for MBA programs is closer to 5 though, so if you choose to apply with fewer years, make sure you demonstrate why now is the time. And because of your lighter experience, it’s even more important to show you have made an impact and demonstrated leadership there. Ideally this will be supported by strong recommendation letters as well. It will also be important to explain why you want your MBA, and to also illustrate the skills you already have which are transferable. Be sure your story makes sense, and is realistic and specific.
