Your profile is overall solid for someone targeting top 15-25 schools in the USA, IESE, and potentially even ISB. You should apply to at least 5 schools, I'd do a spread of 1 reach (ISB), 2-3 target (IESE, McDonough), and 1-2 safety schools (Foster, Kelley), depending on how certain you are that you want to be in an MBA program next year.
Your work experience is well within the median # of years for those programs, and it's nice you have some brands on your resume. Your GPA is not helping you, but the GMAT is more recent and overall your academics could be explained through an optional essay. I'd be curious to know what your GMAT split was.
Regarding your short term goals, tech is more analogous to your overall story, and there are a lot of folks who say they want to do consulting. That being said, things aren't looking great in the tech industry at the moment, so you don't want to give the adcom any concerns about being able to place you. Either way you go, ensure your essays tell a strong story that makes sense.
Regarding mentioning your move into product, I'd say be honest, and just explain the story in a way it makes sense in your essays. Connect the dots for them, so they don't do it on your behalf. Storytelling is often the biggest reason folks reach out to consultants, there's an art to getting it right. We do this every day with our clients.
