Your leadership capabilities and "career progression," will be of utmost interest to the schools. As you are relatively more experienced than the average MBA candidate, the schools will want to know in depth about your professional and personal growth over the last decade.
I believe you have solid experience in design to production rollout across areas such as developing product concepts, creating design specifications, testing prototypes, troubleshooting process problems, and collaborating with teams at all levels for successful product launches. If you're interested in consulting, you can leverage your passion for your current role/industry and express a desire to expand operations strategy for clients at a top management consulting company or in a strategy role at an industry-focused company.
I agree with your decision to consider B Schools in Germany as it will allow you to explore opportunities in tech consulting, automotive, and manufacturing sectors. The geographical proximity to tech hubs like Munich and Berlin is a significant advantage for pursuing a career in product management. ESMT, Leipzig, and Manheim are good options for you. Canadian schools can be a good option as well but the top 3 schools with a sub 680 can be tricky.
Make sure to give your best effort on the GMAT, with a particular focus on the quant section.
