As for internships, I've been looking for many opportunities but they all say that I'm still in the 2nd year.
I doubt I'd get an internship at premium org/bank like Goldman or JPM because they only get interns from the "top" universities, and Bangalore university isn't one.
but, I've got 2 months of time at a work experience program where I wrote papers on companies and managed a portfolio at the Bombay stock exchange.
i could do more of this program and add in a few more months, is that a good idea?
I'll most likely get an internship( investment banking and such) after I write my CFA level 1, but that would be post December 2020,.... and LSE,KCL, said open applications in around September 2020. I'd be a little too late to apply in the first round, where the chances are still good.
besides that, I'm currently doing a course on udemy - Financial analysis and investments by Chris Haroun. I find it really fun and interesting. once I'm through with that, I'll be doing a financial modeling course as well.
what do you think about my chances at LSE/Imperial college London/LBS/Said ? ( applying for 2021)
anything I could do to improve my chances?

If you are able to achieve your target GMAT, then you should certainly have a chance at LSE and LBS. Imperial might be tougher, as they have minimum GPA requirements that are usually hard to meet through the Indian system (you could get there - this is just FYI).
On the program you are a part of, yes, absolutely, try and add more experience there. Programs such as the Oxford MFE explicitly state that while they do not require experience, it is an asset. Other programs will appreciate professional exposure too.
