Thanks for posting your profile. I think you have a lot of strengths - strong undergrad GPA, solid work experience, and community volunteering. As you have some time before your applications, do consider beefing up is your current community leadership activities. Since your involvement with the NGO was during your first MBA degree, are you involved with any community organizations right now? If not, it's not too late to get engaged. If you are already volunteering, consider stepping up your engagement a bit more to demonstrate leadership.
To answer your question on what GMAT score to target, I suggest getting as close to the schools' average GMAT score as you can. For the most selective schools on your list like Harvard and Stanford, the average is around 730. Of course, having a strong GMAT score will offset your softer GPA during your first MBA degree.
