That makes sense to focus on the Haas EWMBA in your situation, and it's an excellent part-time program.
On the plus side, your work experience sounds really strong, and it seems like you have some impressive achievements and results you can share about your startup. The college extracurriculars seem really strong and unique too. It would be best if you had some current extracurriculars, though I'm guessing you're quite busy with work.
The other challenges I see in your profile are experience level (average age for EWMBA program is 30) and GPA (average for EWMBA is 3.4). Your GMAT is right at the average, so you're in range, but if you're willing to retake, I recommend giving that a shot since your GPA is below average.
Finally, make sure you're networking with the program -- attending events, talking to current students, perhaps trying to get a 1:1 or coffee chat with an admissions rep. I find that part-time programs are often a bit more open to those conversations than full-time programs.
