Top 5 U.K. university - Economics BSc - grade 2.1
Professional experience
2.5 years at top tier US investment bank in equity research. Promoted once
2.5 years at well regarded boutique strategy consultancy. Promoted twice. Managing junior associates
GMAT
660 (Q42, V39, IR5)
680 (Q39, V44, IR6)
Target schools
LBS

In addition to an overall perspective on my chances, I’d also like to know whether I should submit only my 680 or both, given the higher quant score in the 660. Both my jobs have involved significant quantitative elements and I wonder if this can offset some negatives from the quant scores, if brought out in references). In addition my degree involved several quantitative modules.

The rule of thumb is always go with the overall higher GMAT score. This is especially the case for someone such as yourself who has achieved a 680 (a great score even if not quite a 700.) Those extra two points from 660 to 680 is significant given how things tend to drop off after 680 for many of the top programs.
Would you reconsider a third exam? If you are looking at the fall 2022 application season, you should theoretically have time (not knowing what else you have going on in your life!) The thought is if you have a somewhat quant background or quant experience you could keep that math score high and try to improve the verbal. A few extra points on either or both sides would do wonders for your overall score.
Of course, I do not know which programs you are targeting so it may not make a huge difference if getting closer to that 700 is not incredibly critical.
