The application process is truly holistic, and committees will look at your stats (GPA and GMAT), work experience, and extracurriculars.
Your GPA of 3.6 is strong, so that is a good start. Plus you can emphasize the fact that over your last 3 years, it was close to a 4.0. So that should help you compete with those applicants who have higher GPAs than 3.6. Your GMAT is also very strong, and yes, that will help compensate for a 3.6 - which is still good!
Your internships are strong. They show a lot of quant ability too, and big names like Goldman certainly don’t hurt. I also think that your entrepreneurship will help differentiate you, so that should be a main focus in your essays. It will also be important to explain why you want a deferred MBA, and to also illustrate the skills you already have which are transferable. Be sure your story makes sense, and is realistic and specific.
Regarding extracurriculars, make sure to really emphasize your leadership roles you have taken on. You have listed some impressive experience here, and this is also a way to differentiate yourself. Perhaps you could focus on one or two which you are very passionate about, and then really elaborate.
I really think that with extremely well-executed applications, you do have a chance at some of these top deferred programs. They are extremely competitive, and each school simply does not have the room to admit all the world's qualified applicants. So I suggest applying to as many as you are interested in. In general though, I would not let your 3.6 deter you for reaching for the best. You have an impressive profile, and hopefully these schools will see that you have a compelling story and are someone who will add value to the classroom and community.
