First off, you have a great GMAT score, so that won't hold you back from applying to any of the schools on your list. Your UG GPA is below average, though--I recommend you address the reasoning in an optional essay, so that the adcom are not connecting the dots on your behalf. The good news is, your GMAT is a more recent perspective on your academic abilities.
Your extracurriculars are interesting, be sure to include the impact into your stories for your essays.
You mentioned wanting to get into consulting post-MBA. As a former McKinsey consultant myself and having supported many candidates through their MBA application journey, I can tell you there are a lot of applicants with the same short term goal. I'm curious--what are your longer term plans? That would help narrow down which schools could be the best fit for you, and which ones you could craft the best stories for in your essays. I'm also curious about your path from banking, to consulting, back to banking--and now back to consulting post-MBA. That will require some effective storytelling in your essays as well. Told the right way, it could be a powerful story. Told the wrong way, it could be a red flag.
Regarding the schools you mentioned, GSB and Wharton are stretches for almost everyone, but don't hold back from applying if either school is your dream. Given your profile, I'd say Booth, Kellogg, Stern, and LBS are stretches but within reason. The rest could be target/safeties. This is already a pretty extensive list of 13 schools, it looks like you aren't tied to a particular geography. Have you considered Tuck? It's a much smaller program, but has a strong track record of placing their students in consulting.
The couple things I'd say you need to address are (1) storytelling and (2) efficiency. R2 deadlines are approaching fast, and there is a bit of unclarity in what I'm seeing in your profile (though that could just be because this has been a very brief intro to you!).
