GMAT uses a laminated legal sized (8.5in x 14in)
quadrille paper as the scratch pad.
Manhattan GMAT produces
a simulation booklet and marker combo (legal size, 4 squares/inch width x 6 squares/inch height) to use during the practice tests.
I have the test simulation booklet. However, I was looking for a similar writing pad for regular practice. I found the following pads:
