1) College: National institute of Fashion Technology (Himachal Pradesh)- 8.1 GPA
2) Founded and run a cafe profitably along with college.
3) head of athletics club at college
4) Founded a top-10 accredited start up in its domain by govt of India.
5) GMAT-700
6) Currently working in management consulting for textile and apparel Industry.

Currently I have one + year experience.
1) will I be eligible to apply for an MBA at a Canadian B-school since by the time the school starts I will have about 2 years of experience.
2) What are my odds to make it to Ivey business school, Smith school, and Rottman?

Ivey recommends 8+ years WE;
Smith recommends min 2, but would like to see between 3-4.
Rotman would also like higher GMAT, and more experience
Overall therefore, you may want to take a chance with Smith, but there are only a few other US schools that may accept; Happy to connect for a one to one discussion over a call

I would agree that these three programs would prefer you having 3 yeas experience. That said, I know applicants who got into Rotman with 2+ years, however with a stellar profile and 750+ GMAT score.
You can also explore the masters in management programs in Canada- these typically do not require work exp. I am sharing a few links:

One deterrent could be the high program fee for an international applicant. If moving to Canada is the main motive, then these programs could help. Otherwise, you can wait to get some more work exp., improve the GMAT and join a regular MBA 2-3 year later.
