I have erroneously written the wrong country code for my recommenders contact number. The recommender is yet to submit her endorsement to the school. Should I exclude the recommender and re-add her? Will it reflect negatively on my application?

You can let her submit the recommendation and then in the meantime reach out to the admissions about the error. I don't think you need to remove and re-add her. They will reach out to the recommender(if needed) after your recommendation is submitted. So you have more than a couple of days of time to get it corrected.
