I took the gmat 2 weeks ago and scored 650 (Q39 V41, respectively 43rd and 94th percentile)
Yesterday I did a CAT using Manhattan (quant section only) and scored 39 (43rd percentile), which I was very unhappy with as it shows that after 2 weeks of practice I haven't improved at all.
However, I felt the MGMAT test was significantly harder than the practice questions I've done (using Magoosh, Kaplan and the official GMAT review book), so I took a Veritas test today (only the quant section again) and I scored 46 (71st percentile). I'm pretty happy with this score, but I did feel that it was significantly easier than MGMAT.
Not quite sure how to decipher my results given the disparities between the results? I did the two tests in the same conditions (i.e. at the same time of the day) so it isn't as if I was particularly tired during the MGMAT test.
Any thoughts?

Hi and welcome to GMAT Club!
Yes, there are differences between tests. Definitely. Many feel that MGMAT has harder math than what you will encounter on the GMAT.
Others tend to feel Kaplan was harder as well. There is not as much about Veritas Prep but most feel it is close. similarly GMAT Club tests for example is harder than official questions you encounter
The bottom line is the scoring system - e.g. does MGMAT allow you to make more errors potentially and still get a certain score. Similarly an easy question provider (e.g. Princeton Review) can still give you a low score if you miss just a handful of questions vs. MGMAT giving you a higher score even with missing half. So, it is not only about the difficulty of questions but also about the scoring of the whole test.
