In general, your essays about careers goals need to be both aspirational and pragmatic. The idea of starting your own Energy fund as a long-term goal seems very appropriate and covers both of those criteria. As for your short-term goal, you definitely do not need to talk about coming back to your existing firm to mitigate any risk to your profile. You can mention that if you feel it's what you want to do, but that specific short-term goal (versus another) is not going to make you a more or less favorable candidate. Illustrating a clear and logical narrative is most important whether that means going to a new firm or returning to your existing one.
Keep in mind, the career goals essays need to be convincing but are not in and of themselves the reason you get into a program. All these schools recognize that people are likely to change their minds as they go through the MBA program. In fact, in many cases the schools want you to come in open-minded even though in the application process they want you to have a very defined path. It's kind of a funny back-and-forth but that's just how the game is played.
