Hi Div263,
The average GMAT for your target schools is much higher than your present GMAT score. If you can increase your score by 20-30 points that will go a long way. Having said that, there is a silver lining in diversity section. All business schools want to increase women in their class. If you prepare a stellar application to distinguish yourself from other applicants (which looking at your profile seems possible to me), you have a good chance.
Product Management is confluence of marketing, strategy and technical fields. As such you don't have a specialisation for it. However, you may pick your electives to maximise your learning.
Your school selection is very good. I would just add Kellogg and IE. Former is excellent for marketing and latter for entrepreneurship. Hope this helps.
Please feel free to shoot any more questions if you have. Good Luck !
