Sounds like you've been on quite the journey. Depending on how your GMAT goes, I'd be in a better position to help you narrow down reach/target/safety schools. Given your age and work experience, you may be better poised for an executive or part time MBA--that would also enable you to spend more time building your venture.
As far as how schools would view your plans, I think you could tell a compelling story around how you'll leverage the school's startup offerings and network to scale your venture. If they feel like you're going places and they can help, they're going to want to hitch their brand onto you.
