Essays are the most important part of your business school applications. So once you have shortlisted schools, I would suggest you to get right to it. Most schools will have more than two essays and writing a spectacular essay could take a lot of time. Work on one schools at a time and try to write unique essays for each schools. Spend time researching about the schools, talk to current students and alumni. Find information that is not there on the schools' website.
You have to present a cogent and fool-proof argument for - 1) why the school is perfect for
2) how you will make a perfect fit for the school 3) post MBA goals and 4) how the school will help you in achieving your long term and short term goals
Answer these questions as specifically as you can with real life examples. For example if you want to enter in IB after MBA, don't just say that the school tops the ranking for the field, rather say how the school offers better and more specialized electives in the field, that you are eager to study with xyz professors who are experts in that field, how the school has a very strong alumni in IB and how this would offer you unmatched networking opportunities, etc. Of course, there are many other and better ways of answering a question such as this. Find them!
Avoid cliches and be thorough in your research. If you can present unique answers to these questions, your application will stand out among a sea of applicants who present the same old responses and reasons to these questions.
Finally, i would advise you to get your essays evaluated by alumni.
As far as letter of recommendation is concerned, take letters from someone who knows you well, has worked with you closely and can demonstrate your abilities through the experiences they have had with you.
