IMO, Maria and I are going to the beach. (In formal English, 'I' should always be secondary). I also think "Maria and me are going to the beach" and "Me and Maria are going to the beach" are wrong.

I agree. In formal english, I always comes at the end. Don't remember the source though.

Its manners or respect which prevents "I" to be first when apart from "I" there is somebody else also.

Maria and I are going to the beach. (Correct)
Check any English grammer book and you will find that "I" always comes second when we have another subject joined by and. (Just to show respect)
