Your verbal does indeed seem quite strong. For quant, what material have you been using so far?

One idea would be to take a look at the Manhattan books. Some of the strategies that book teaches are quite structured and easy to apply. For example, after learning the double matrix and Venn diagram strategies for questions on overlapping sets, you can tackle pretty much any overlapping set question. The same goes for rate-time-work problems, for which there's also quite a nice way of structuring the problems so they become much easier to solve. Also, perhaps check out the section on combinatorics. Anyway, these are question types that can be pretty hard to solve in 2 minutes if you're not prepared, but for which there are fairly easy-to-learn strategies that make them pretty trivial.

So far I've been using the Kaplan prep 2020 plus book and although it covers the basics pretty well I'm not sure if it has been the best book for strategy. I've considered buying the Manhattan Prep book but am also wondering if 1.5 weeks of reviewing it while working a job will be enough time for me to learn/implement the strategies - but if you say the strategies are fairly easy to learn then I may look more into this book.

Thank you!
