First stop worrying too much about the scores in kaplan, since No exam apart form GMAT Prep is accurate. sit down and analyze where you are exactly loosing your scores. If you think math is troubling you, I suggest you must be in a position to pinpoint what exactly troubles you and strengthen the same. same is the case with verbal. But, be sure when you practice even for one hour, include both verbal and math in your practice. Time each question and see what difficulties are you facing. Irrespective of whether you are taking the exam or simply practicing ensure that you solve with below time limits so that time management will be a part of you.
Quant- Not more than 2 min - Can take up to Maximum 2.5 mins for very difficult questions
Sentence corrections- Not more than 1.15 Mins- Can take up to 2 mins for really tough questions.
Critical reasoning- Not more than 2 min - Can take up to Maximum 2.5 mins for very difficult questions
Reading comprehension- Not more than 3 mins for reading the passage- 1 min for general inference questions and 1.5 mins for detailed questions, which needs you to look at the passage once again to answer.

I am sure it will be difficult for you initially. But, our mind has got an enormous power to get used to anything. As you told you have 3 weeks you can spend 2 hours every day and around 6-7 hours in weekend and keep on practicing as many questions as possible with the above time limit. But, ensure that you analyze all the question that troubled you while practicing with time constraint, once you finish your practice and you involve both Verbal and quant in your practice.
