B. much below that of male worker's despite educational differences diminishing - incorrect as well. This correction uses a different adverb (much below) than A, but still uses "that of".
C. much below male workers in spite of diminishing educational differences - Incorrect, the sentence should be comparing the earnings of male workers to those of female works, not male workers to earnings.
