denotes a XYZ (describing) course that is still popular. C is not correct since "criticized, that is still popular" looks ackward. A is not very clean since "yet still popular " would have brought the right contrast.

Only A maintains parallelism
Also, "once" better conveys the idea that "something was but no longer is"
"one-time" erroneously refers to a static point in time
Furthermore, B is unnecessarily wordy with the introduction of a restrictive clause "that" at the end which could more clearly shortened to A's enumeration.
