Jonathon didn’t believe in UFOs until he saw one hover above his house and take off like a streak across the sky.
The two blue parts are parallel. They modify "one"/the UFO. That's why simple present tense is correct.
Hope it helps.

[A]!b) don’t believe in UFOs until he saw one -- plurality which is wrong
c) believed not in UFOs until he seen one -- the structure is unnecessary complicated.
d) hasn’t believed in UFOs until he sees one -- changes the meaning of the parent sentence
e) didn’t never believe in UFOs until he saw one -- two negatives in a sentence which is wrong as well.
Hence the answer should be [A]. Hope my explanation is accurate!
