Thanks for reaching out! A 730 is a solid GMAT score -- higher is always better of course, so if you think you can get a higher score without taking time away from your essays, it's worth giving the GMAT another shot. But you are in good shape with that score.
Given that the GMAT is solid, your chances of getting into a deferred MBA program like Stern or Yale are really going to rest on the strength of your accomplishments with your non-profit. It's great that you started one -- but the adcom is also going to want to see that it's been very successful & that you've driven meaningful impact. The adcom is taking a chance on deferred candidates, so you have to prove that you are someone who they wouldn't want to get away. Deferred applicants who are accepted tend to be candidates whom the adcom believes would end up being an exceptionally strong candidate (like someone who they might even offer funding to) if they were to wait & apply full-time. In other words, they have incentive to scoop those candidates up now so that another school doesn't get them instead down the road.
Given that, a lot is going to depend on the extent to which you can impress them with the strength of your accomplishments & the impact you've had so far in your career. That will be an indicator of your likely success post-MBA as well as an indicator of what you can contribute while in b-school.
Your career goals are key as well. Those not only form the basis for your "why MBA" argument but also form the basis for your argument about why you need the deferred MBA. Career goals are an opportunity to differentiate yourself as well.
I think you have a shot at these schools, and worst case if you don't get in & apply to the full time program later on you can show your continued interest. But without knowing more about you & the specifics of your accomplishments it's tough to say for sure exactly how competitive you are. Based on what you shared here it sounds like you have good reach with the 15K. They'll then want to see what exactly you've done to change the lives of those 15K & how your success compares to the competition. What unique impact are you having in the world?
