I took the GMAT exam on 12/12/2020, so this year (2021) am I eligible to take 2 online GMAT exam or one?

As per GMAT website, you can only take the GMAT online exam twice. If your last exam was online, then you can only take it one more time. If it wasn't you can take it two more times, separated by a gap of at least 16 days.
Can I take the GMAT™ Online exam more than once?
All candidates will be allowed two (2) GMAT™ online exam attempts.
Note: The GMAT™ online exam can be taken once every 16 calendar days. However, you may have a GMAT test center appointment within 16 calendar days of a GMAT™ online exam appointment.

You can take the online GMAT a maximum of two times. So, if you took the online GMAT one year ago, you have one online attempt left.
