The answer should be D. The it is used as a subject, and can only refer to the subject in the previous clause.
GMAT Ninja has done a good video on that topic.

OFFICIAL EXPLANATION



ANSWER: D

The answer has to refer to “the English bulldog” singular, because the final phrase refers to “a loyal animal companion” singular; therefore, B and C are out. Answer A is incorrect because the “but now” does not work with the phrasing of the sentence. Between D and E, the wording of E is somewhat awkward
in that “is now being cherished” is less standard than the simpler “is now cherished”; D is the best answer.

Here is my Analysis, would appreciate experts view on this

Noted for its tenacity and courage, the English bulldog, having originally been bred for the brutal sport of bull-baiting, but now is cherished as a loyal animal companion.


Subject of sentence is Singular : This can be identified from Hint words in Non underlined Part such as "Its" and "as a loyal animal"

A. the English bulldog, having originally been bred for the brutal sport of bull-baiting, but now is cherished
Here, "Having originally been bred" give a sense of reason for now cherished as a loyal animal but that is not seems an intended meaning.

B. English bulldogs were originally bred for the brutal sport of bull-baiting, but they are now cherished
Incorrect for S/V Agreement error

C. English bulldogs were originally bred to bait bulls in a brutal sport, but it is now cherished
Incorrect for S/V Agreement error

D. the English bulldog was originally bred for the brutal sport of bull-baiting, but it is now cherished
Here, it seems unnecessary when we start our parallelism from "was originally bred for.............. but it is now cherished...........as a loyal animal. but this is also the correct way of contrast comparison.

E. the English bulldog, originally bred to bait bulls for a brutal sport, is now being cherished
"Being" is not required in this sentence and It is unnecessary. In original sentence contrast is given but in this sentence contrast is also lost. Hence incorrect
