1) Assuming I get the same score (675 +/- 30) over the next 3 mocks, would it be safe for me to schedule my actual exam as soon as possible? Or would it be recommended for me to take another 1-2 weeks after the completion of the mocks to drill my weak areas? (Depends on how confident you feel after taking the mocks; do you feel that you have covered your entire ground? Or are there areas where you can still improve? If it's the latter case, I would suggest saving a few mocks for the endgame.
2) Would there be a big difference in retaking the mocks again, or are they more or less the same questions? (At least twice, you will get new questions is my assumption)

The good news is that you can repeat the official practice exams once and see fresh questions when taking the repeated practice tests. Regarding how to move forward, if you take a few more practice exams and score near your score goal, as long as you feel confident, I have no issues with you giving the GMAT a shot.
