2) Is there any value in submitting multiple scores (specifically, the 160 V, 158 Q and the 157 V, 162 Q scores) so admissions can see I scored high on verbal on a previous test?

NO. you can submit only one score when you submit your application
Any thoughts on which score I should submit? The 160 V, 158 Q (and AWA 5) seems more balanced, but the quant score is lower and slightly below my targets for part time programs. In comparison, the 157 V, 162 Q is above the average for quant but could be less balanced with the verbal score and TBD on writing score (let's assume it's a 2/3). Do top schools care more about the quant score?

The first thing you should do is to pinpoint which school you want to go: Daredeen, MIT, ..whatever.

Go to the website of each single school, take note of the score they want and then pick up to submit your score which one is best or at least that satisfy the criteria.

The most straight path you can follow.

With a GRE score of 157 in Verbal and 162 in Quantitative, you have a strong foundation, particularly in the Quantitative section. Whether you should retake the GRE depends on your target graduate programs and their average GRE requirements.

Just cleared my GRE with great results, all thanks to Dumpsforsure! Their practice questions were super helpful and gave me the confidence I needed. If you're getting ready for the GRE, definitely give their material a try!
