Had been implies that this occured in the past somehow before another event.... however the results still ARE breathtaking, so 'had been' is wrong.

A it is. A clearly states that students are unaware (currently). The mathematician produced a number of theories that are breathtaking is clear.
B. "that had been breathtaking" suggests that they are no longer breathtaking.
C. here had is not needed b/c simple past works just fine. Also we have no other previous happening in the past besides te creation of theories, thus no need for had.
D. "that is" does not agree w/ a number of. requires plural "are"
E. Students had been unaware? and "had produced" doesn't make sense.
