University Choices for PhD

Hello ! I am planning to apply for a PhD in organizational behavior. My first GMAT attempt was 3 years ago and I got a 630. Now, I am planning on taking it again end of November. Hopefully, I ll be able to score in the 700 range, given the 2 months time period, I will devote for it.
I have a Bachelor's in Nutrition (graduated with distinction) from the American University in Beirut and currently finishing my MBA (GPA=4) from the Lebanese American University (Not AACSB accredited) and I published an article in a reputable international journal (me being the first author). However, as I look at the acceptance rate of universities and the level of competition, I feel it is really hard to get accepted. Do you have any advice to share about building an application and the universities to apply for, since for me now I feel demotivated.
I would appreciate it if you can share your experience regarding PhD admissions and the universities you applied for. Do you recommend any universities I can apply for that would accept me with such a profile? I am looking at universities in USA or UK as long as they cover tuition fees and offer stipends for international students.
