I solve a lot of questions from the OG, even under timed circumstances and have maintained an accuracy of 90% in quant with 85+ in the other section, but during mocks I seem to get a lot incorrect so much so that when I later analyze by redoing the mock questions, I almost always get the correct one without even having any memory of the option I picked during the test.

Based on your prior posts, you've been studying for just the last 1 - 1.5 months. Many GMATers spend 3 months (or more) of consistent study time before they hit their 'peak' scores though, so it's likely that you just have not put in enough time and effort to have performed at a higher level YET.
Before I can offer you the specific advice that you’re looking for, it would help if you could provide a bit more information on how you've been studying and your goals:
1) How many hours do you typically study each week?
2) Have you used any other study materials besides the OG? What “brands” of CATs/mocks have you used?
3) On what dates (or approximate dates) did you take EACH of your CATs/mocks and how did you score on EACH (including the Quant and Verbal Scaled Scores for EACH)?
4) What is your overall goal score?
