It depends on the person. So long as you do not succumb to nervousness, practice tests are generally a pretty good indicator of the actual test.

I do believe that Veritas is a great source to practice from and a good indicator of what my score might be on the GMAT, but what I'm really concerned about is how people in general score on the actual test in comparison to the practice tests they have taken.

I would recommend taking the free GMAT prep tests 1 and 2 from mba.com if you haven't already. They have real GMAT questions which are now retired and thus these tests are the best indicators of your scores on the real thing, unless you have been solving questions on forums and may get questions which you have already seen before in these mocks. In that case your scores would be inflated.
