Hi,
How much time should I be spending on the practice questions? Lately, I have been spending 10+ minutes on some problems because I really want to get the solution without looking at the answer. I'm thinking this is not very productive, should one treat the practice questions as if it is the actual test and only spend roughly 2 minutes a question? At this stage, I’m only practicing quant.

Depends on what stage of preparation you are at. If you have just started, I would recommend not worrying about timing and concentrating more on accuracy. Once you will reach 80-90% (or desired) accuracy in particular area, work on the pace. Ideally you should spend less that 2 minuets for each question.

If you're spending 10+ minutes on a single problem, something is not right. You want to make sure your timing on practice problems keeps you in the average time to finish the test (key: average. You will spend more time on more difficult problems and less time on easier ones).
That being said, 10+ minutes is too long. Review the explanation and figure out why it takes you so long to approach the problem. Keep an error log and identify trends in the "WHY" aspect, figure out how to remedy this and move forward.
