Given that you have two months, I'd say you are spending too much time on quant.
So before doing anything else. You need a baseline score from the GMAT Prep test downloadable from MBA.com
Once you have a baseline, we can work on a plan.

I did take a GMAT prep test, unfortunately, I can't really see what I did bad on, more than the actual score I got

I scored 560 on the GMAT Prep one, and in the range of 590-630 on Manhattan CATs. My goal is 700.

Whats quite annoying is that even though I have an error log, and thoroughly use it - i still kinda feel like i stagnate. I'll do the 500-600Level sections here on the forum, get around 70-80% correct and think to myself "hm alright, I think I got an okay grasp on it. Then I did the manhattan online question bank, and gmat prep questions and I can barely hit 50-60% correct

Oh, yes! It is super annoying. How about taking a look at your Manhattan mock results once more. But this time, keep an eye out for the following:
1. Which is your weaker section - Quant or Verbal?
2. Within the weakest section, which is the weakest area? Example: If verbal is the weaker section then which among the following is the weakest area: RC, CR, or SC
3. Within the weakest area, what is the minimum, maximum, and average difficulty level of the questions?

Share this info with me and I will tell you what to do next.
