Help! I've taken the GMAT 2x already and am going to take it a third time in a few weeks. My issue is with quant and I've taken the two prep courses and have scored well on official GMAC practice exams. It seems like the exam itself is way harder than the practice exams...

If you have undergone 2 prep courses, I assume your concepts are clear. What you need is, a lot of practice on quality question. Believe me, quants get better and faster with practice. Go with practice tests, and keep the error log. Do thousands of quality questions but analyse one incorrect that will make it time effective and you'll get much out of it. keeping error log is must.
I came across a post from Bunuel. He analyzed the GMAT marking algorithm with his experiments. He experimented on the myth, that GMAC has always denied that first 10 questions of test are most important, while last 10 are least. Below is result of his post.
He attempted the worst case scenario and answered the first 27 Q questions correctly and then will answer the remaining 10 questions incorrectly (not guess but incorrectly).
Result: Score - Q49. Percentile - 75th. First 21 questions CORRECT. The final 10 questions WRONG.
Analysis: The questions were much harder this time with some new topics/types appearing on the test such as coordinate geometry/probability etc. Conclusion: the last 10 don't count as much as the first 10. This myth is True (as long as you can get the first 21 right). Please note that I have not guessed the last 10 but rather answered them incorrectly (which means I still had to solve those questions too). If you are guessing, you will most likely get a higher score.

I would recommend two options-
1. Online course - Try TTP and I am sure you will see an improvement in your scores. They have a fantastic user interface and are loaded with practice questions. The only catch is that it can be an expensive option.
2. GMATclub tests with an extensive use of the error log.
