I just started going through the foundation of verbal and math and I don’t know if I should have taken the practice test beforehand.
I’m a bit scared this will lower my expectations since I have to have this done by August in the latest.

Probably your best move is to prep a bit more, to familiarize yourself with foundations and then with the question types, and then take an official practice test.
The GMAT is a game, and knowing what the game is like and how you stand in terms of your skill in playing the game can be super helpful as you train to play the game better. Taking a practice test is a way to see what the game is like and where you stand in terms of your skill in playing the game.
Regarding "lower my expectations," from what I have seen, people who avoid the test to avoid scaring themselves, or something along those lines, don't score very high. The way to score high on the GMAT is to assess what the reality is and do what you have to do in order to make hitting your score goal happen.
Regarding "have to have this done by August," in that case, you better take a practice test to see where you stand, so that you are aware of how much you have to do in order to hit your score goal.
For some motivation, you could use the example of someone I know who went from 380 to 750. She took over 20 practice tests. By the time she took the GMAT for the last time, totally rocking it was natural for her.
