I had a terrible test center experience where the proctor ate up a significant chunk of time in verbal. As such, I’m leaning to retake GMAT online in the comfort of my own home. Unfortunately, I’m trying to make round 1 deadlines and my timing is tight. If I take GMAT online before the deadlines, will it still count if it takes a while to process or goes into review? Or should I err on the side of caution and take it in the test center again?

For an application, you need to know your score and for some schools need to have a screenshot of your score. You should be able to do it the day you take the test.
If your test goes into the administrative review, which is somewhat common these days, your score will disappear during that time but it doesn’t matter for the application process because you can send your score after the deadline. The requirement is that your test must be taken before the deadline. It’s OK for the score report to take a few weeks to arrive to the admissions committee.
