The next couple of months will be incredibly hectic for me. I have to study and take the gmat,....as well as complete the applications in time for an early submittal (I would like to have my apps submitted by mid September). I want to get a head start on the essays. MIT is not releasing their application until the end of this month. Should I get started on the last year's essay
s as a template? Do the essays change that much from year to year?

Dont bother, the questions change. The only thing you can start working on:

Why do you want an MBA
Why do you want to go to school X
What are your short and long term goals
Why is an MBA critical in getting to those goals

'Answer' those in your head or on paper and make those polished

Those questions are the building blocks of almost every school's career goals essay. It's good to have the answers fleshed out on paper. While you can't use last year's essays to start writing this year's you can look at them for ideation. Think about how you would answer them. What examples in your professional life can you use to illustrate certain points. You'll find that this helps you come up with a lot of good material to use regardless of the question being asked.

Question...why do you want to apply in September?

No good reason,...i guess i should probably submit as late as possible. Thanks for your replies. I'm really worried about my applications. Stressed out. I have a 3.1 gpa and haven't taken the gmat.

No. You should submit when you're READY. Try to give yourself enough time to give each portion of your application the attention it deserves. Only you can decide how much time you will need to properly prepare for the GMAT, secure recommenders, fill out apps, and write essays. Good luck!

so many of the question are out, the rest should be out soon. you can use the ones that are out + the basics mentioned above and before you know it all the q's will be online. def don't waste time answeruing old ones that are obscure.
