Among the safest of all perishable foods, pathogens cannot grow in yogurt because it is highly acidic.

(A) pathogens cannot grow in yogurt because it is highly acidic (starting prepositional Phrase is illogically talking about Pathogens(pathogens are not food rather they are some kind of virus)
(B) yogurt's high acidity prevents the growth of pathogens (starting prepositional Phrase has to modify a noun not the possessive form of a noun)
(C) yogurt is highly acidic and does not support the growth of pathogens (starting prepositional Phrase is modifying a most logical noun "yogurt")
(D) the high acidity of yogurt prevents the growth of pathogens (starting prepositional Phrase is modify the acidity, which is not a food)
(E) it is hard for pathogens to grow in yogurt because it is highly acidic (We want an entity right after the starting prepositional Phrase and we do not have any in this sentence)

Among choices , subject is clearly present in C.
