In response to several bacterial infections traced to its apple juice,McElligott now flash pasteurizes its apple juice by quickly heating and immediately rechilling it. Intensive pasteurization, in which juice is heated for an hour, eliminates bacteria more effectively than does any other method, but is likely to destroy the original flavor. However, because McElligott’s citrus juices have not been linked to any bacterial infections, they remain unpasteurized.

Type- inference

(A) McElligott’s citrus juices contain fewer infectious bacteria than do citrus juices produced by other companies.- out of scope - we have no idea about infectious bacteria content in McElligott's citrus juice and in citrus juice produced by other companies
(B) McElligott’s apple juice is less likely to contain infectious bacteria than are McElligott’s citrus juices.- incorrect- we know that several bacterial infections were traced to McElligott's apple juice but we can not make a comparison between M's apple and citrus juice as we do not have enough information
(C) McElligott’s citrus juices retain more of the juices’ original flavor than do any pasteurized citrus juices.- incorrect, we know that Intensive pasteurization destroys the flavor but we have no idea about the method used by any pasteurized citrus juices
(D) The most effective method for eliminating bacteria from juice is also the method most likely to destroy flavor.- incorrect, we know that Intensive pasteurization is the most effective method but there might be other methods that are most likely to destroy the flavor
(E) Apple juice that undergoes intensive pasteurization is less likely than McElligott’s apple juice is to contain bacteria.- Correct - since intensive pasteurization is more effective than any other method in eliminating bacteria and M's apple juice does not use intensive pasteurization

Amoung option C and E, option c is doubtful because we do not know which pasturisation it is taking about(Flash Pasturisation does not affect flavor). But option E will be always right.

Pls ask if explanation for option E is required.

However, how can we infer that McElligott doesn't apply "Intensive pasteurization" for its apple juice as well?

Just because it use "flash pasteurizes" doesn't mean that it doesn't use "Intensive pasteurization".

Please explain.

I am not an expert, but hope I can clear your doubt:

We have to constraint ourselves to what is given in the argument.
First - "flash pasteurization" and "intensive pasteurizatio" are mutually exclusive technique (I do not have any knowledge about these techniques. I am just basing my answer on what information we have from the passage)
Second - The argument states that the company uses "flash pasteurization technique". The passage does not mention any commonalities between the two techniques. Hence, we again have to assume that the company does not combine the two techniques.
