There are many benefits to timing your practice, including:
I would say to focus on learning from your mistakes and not to get psyched out. Ask yourself why you get specific questions wrong and make a psychological note so that you will never make that same mistake again.
CAT algorithms may or may not be accurate. Worry less about what the score says - and worry more about the specific traps that you fell into and what you can learn from them.
There are only so many ways GMAT folks can test you on the concepts - as long as you continue to learn from your mistakes, you should be in good shape.
You are going to see variability in your scores across different prep companies. You will also see some reduction in your score during your preparation because you see more stuff you should be capable of answering but you haven't refined the skills yet, so timing and accuracy are a problem. Your score will increase as you continue in your preparation. I recommend sticking with a single prep test source as you are improving your skills and using GMAT prep exams as you get close to test day to have the best approximation of your score on test day.
