Great profile! You have some good scores (GPA, GRE), solid work experience, and excellent extracurricular activities.

Based on what you have shared, your best efforts moving forward are to focus on forming an interesting narrative (both pre- and post-MBA), writing great essays to support that story, and engaging with the schools on your list to express your interest.

Those schools are all terrific programs and named seem very appropriate for your profile. You are definitely best off applying on the early side, as in traditional R1. You should also note that a few of those schools actually have four rounds (NYU, Cornell), and so R1/R2 = traditional R1, R3 = traditional R2 and R4 = traditional R3.

There are a few things for you to consider:

(1) Given your unusual background, slightly older age grouping and competitive nationality, I would suggest you retake the GMAT if possible. A score of 700 is going to make some of the more competitive schools more obtainable. I am concerned that a 700 - while not going to weed you out - is going to end up being a slight negative in your overall profile.

(2) Make sure you have a real bona fide reason for wanting an MBA. Health consulting or consulting general is not going to cut it, especially since you going for a master of public health / health administration. Schools might look at your profile and ask, does she really need this degree? Can she not just go do what she wants to do without it?

Otherwise, you have a very interesting profile. Your pro bono work, in particular, is excellent.

We work with non-traditional candidates all the time. If you are in need of a consulting service, please reach out for a consultation so we can discuss your background and more.
