I am currently waitlisted at two Top fifteen schools (Fuqua, Darden, Ross, Yale, Johnson, Stern).
Stats: 710 GMAT (49q, 37v) and a 3.30 undergrad GPA - no trend in GPA.
I recognize my GPA is low, and was wondering if you think taking some classes (econ, finance, accounting, etc.) would help. Given my semi-quant (took CalcI - Calculus III and received As) background and admissible quant subscore on my gmat, I'm not sure what i can do to improve. Would you recommend I take the GMAT again / GRE to enhance my profile or would you recommend taking those courses to demonstrate effort?

I don't think you need to take courses. Your GPA is likely not the only or main problem (plus it's enough for you to tell them you WILL take courses), but their concerns might lie elsewhere. But a good place to start would be to think about what you CAN do. And it might be improvements at work, taking more volunteer work, etc. etc. It is a bit hard to say without knowing your candidacy intimately though.
